Background
The Housing & Food Services Department (HFS) of the University of Washington is establishing a contract for quality wholesale delivered packaged sushi for selected Dining units operated by HFS. The scope is wholesale production and delivery for 8 ~ 10 locations with a volume of 200 ~ 400 packages per day combined across the entire wholesale program during the academic year.
The contractor is expected to provide quality wholesale delivered packaged sushi for selected Dining units operated by HFS. The scope includes off-campus production and delivery, on-campus production in an HFS Dining location, and an on-site sushi counter using an existing space on campus. HFS is also interested in an on-site sushi counter with staff engaging with customers in a made-to-order sushi roll program.

Work Details
The contractor must meet specific minimum qualifications related to production kitchen location, operating permits, delivery vehicles, packaging materials, experience in the wholesale sushi business, delivery plan, and compliance with health and safety regulations. For the on-site sushi counter, minimum qualifications include operating hours, staffing levels, and attendance at the mandatory walkthrough.
The issue of RFP is on June 25, 2024. The proposal due date is July 23, 2024, and the award is expected in mid-August 2024. The service is scheduled to begin in September 2024. HFS reserves the right to revise this timeline.
