Jail Food Services

Background
The St. Mary’s County Government is seeking proposals to provide food services for employees and incarcerated individuals at the St. Mary’s County Detention and Rehabilitation Center (SMCDRC), a 351-bed local correctional facility.
The goal is to ensure that all meals are prepared from scratch on-site, adhering to established cycle menus that accommodate regular, special, or restricted diets.

Work Details
The contractor will manage and operate the food service at SMCDRC, which includes:
- Complete on-site management of food service operations and facilities.
- Administrative, professional, and technical supervisory support.
- Periodic revision of 28-day cycle menus certified by registered dieticians.
- Food procurement, preparation, and service including meat, poultry, fish, fresh fruits, vegetables, canned goods, milk, bread, condiments, and utensils.
- All labor costs including correctional training for employees.
- Replacement of initial inventory of dishes and utensils provided by the County.
- Provision of laundry services and necessary supplies.
- Compliance with all insurance coverage and licensing requirements.
- Capability to feed approximately 350 residents three meals per day and correctional staff three meals per shift.

Period of Performance
The contract will commence upon award and will continue for a specified period as outlined in the solicitation documents.

Place of Performance
Food services will be performed on-site at the St. Mary’s County Detention and Rehabilitation Center located in Leonardtown, Maryland.
