Background
The St. Mary’s County Government is seeking proposals to provide food services for employees and incarcerated individuals at the St. Mary’s County Detention and Rehabilitation Center (SMCDRC), a 351-bed local correctional facility.
The goal is to ensure that all meals are prepared from scratch on-site, adhering to established cycle menus that accommodate regular, special, or restricted diets.
Work Details
The contractor will manage and operate the food service at SMCDRC, which includes:
- Complete on-site management of food service operations and facilities.
- Administrative, professional, and technical supervisory support.
- Periodic revision of 28-day cycle menus certified by registered dieticians.
- Food procurement, preparation, and service including meat, poultry, fish, fresh fruits, vegetables, canned goods, milk, bread, condiments, and utensils.
- All labor costs including correctional training for employees.
