Draft Mozzarella Cheese CRD July 2024

Background
The Agricultural Marketing Service (AMS) is seeking industry and public comment on the Draft Mozzarella Cheese Commodity Requirements Document (CRD). The updates include requirements for shredded cheese, microbiological requirements, new material, and requirements for bulk products for further processing (processor packs), primary and secondary container labeling, and other changes. The effective date for the CRD is July 2024.

Work Details
The Mozzarella cheese requirements include product standards, production requirements, product age and temperature requirements, composition requirements, microbiological requirements, physical analysis, additional shredded requirements, additional string cheese requirements, liability details, quality assurance procedures, weight requirements, bulk materials for further processing specifications, commercial packaging requirements, containers and materials specifications, packaging and labeling instructions including the 'DO NOT FREEZE' statement on outer shipping containers for certain products, lot code/certificate number marking on primary shipping materials, and material codes with associated packaging options and net weights per truck.
