DRAFT Agricultural Marketing Service (AMS) Livestock and Poultry (LP) Program Standards and Specifications Division (SSD) has provided detailed specifications for the production of fully-cooked, smoked turkey ham products. The specifications include specific item descriptions, applicable documents, checklist of requirements, harvesting and processing standards, organoleptic requirements and defects for meat, processing sequence and formulation, packaging and packing requirements, labeling requirements, final examination of packaged and packed commodity, loading and shipping frozen commodity requirements, inspection and checkloading procedures, palletized unit loads specifications, and shipment and delivery provisions.
